HOW TO MAKE PUFFY SAUSAGE ROLLS

Probably the entire citizens of Nigeria has on many occasions eaten sausage roll, most especially the packed sausage roll sold virtually at every turn. Sausage roll is a quick snack and by default, a traffic meal. If you reside in Lagos state, you know very much about sausage roll as a traffic meal (but have you ever left your 450 naira change with the sausage roll hawker? Emotional torture!)

The good thing about making sausage rolls at home is that you can make the ones with puffy dough that comes out fuller and more yummy and delightful!

To make this, you need for the filling:

  • Onions (1 medium)
  • Cameroon pepper (1 teaspoon)
  • Seasoning cube (1)
  • Thyme (1 teaspoon)
  • Garlic (minced, 1 teaspoon)
  • Minced meat (450g)
  • Raw Egg (1)
  • Salt (1 teaspoon)
  • Groundnut oil/Margarine (2 teaspoons)

To make the pastry, you’ll need:

  • Flour (500g)
  • Margarine (250g)
  • Baking Powder (1 teaspoon)
  • Salt (1 pinch)
  • Egg (1)
  • Flavour (1 cap full)
  • Water (250ml)

(Our measurement will make up to 15 sausage rolls)

Let’s make the filling:

In a saucepan, add your margarine to sauté the finely diced onions for about a minute, then add garlic, thyme, pepper, salt and seasoning cube and stir for about another minute or two. In a medium bowl, pour in your unseasoned minced beef or sausage meat, break in one raw egg. Introduce your sautéed mixture into the bowl of beef/sausage meat and mix.

Let’s make the filling:

Sift your flour and baking powder into your mixing bowl, add salt, margarine and mix. Add your whisked raw egg and mix again. Introduce your flavour to your water and mix with the flour till a fine dough is achieved. Transfer your dough onto your work table and knead.

Now let’s prepare our sausage:

Cut the dough into smaller portions. Knead out the portions to a desirable thickness (we want it to come out puffy). Cut out squares off the kneaded dough with a knife. With a spoon, pack in some meat on the cut-out dough and roll up. Brush the skin with left over raw egg.

Place the rolls on a baking sheet and into the oven to bake for 15-20 minutes.

Serve with tea or chilled soft drinks. Enjoy!
